Katsu Sando is a fast-casual Japanese restaurant serving delicious, convenient, and chef-inspired Japanese food on-the-go inspired by the unique food culture surrounding the Japanese ā€œconbiniā€ convenience stores.

Chef, Daniel Son and head chef of Kura first became obsessed with katsu sandos while training at Nihonryori Ryugin in Tokyo, Japan. After long days in the kitchen, he would frequent the local convenient store where Katsu Sandos were and take home his favorite go-to after work snack.

Upon returning to the states, he had difficulty finding good quality katsu sandwiches and thus began the quest to create his very own. His goal is to elevate ā€œconbiniā€ originals to their full potential, bringing the gems of yōshoku cuisine to LA for everyone to experience. Curious about Chef Daniel?

Chef Daniel Son began his culinary career by apprenticing under his father and fellow sushi chef when he was 15 years old at KURA. He moved onto Spago Beverly Hills at 19 and soon transitioned to NYC graduating from The Culinary Institute of America in Hyde Park. Daniel moved to Tokyo shortly thereafter, and trained at the 3 Michelin star Kaiseki Restaurant in Nihonryori Ryugin in Roppongi, Japan.

From there he moved to Denmark, and staged at Restaurant Noma – ranked by Restaurant Magazine as Best Restaurant in the World. Finally, Daniel moved back to California and apprenticed under Chef Akira Yoshizumi at his time in Umami Sushi in San Francisco, who now runs 1 Michelin star restaurant, Sushi Yoshizumi. In 2013, Daniel moved south back to his roots in L.A and took over as head chef for KURA in 2013 and continues to offer-up his impeccable culinary skills for his customers – with a sense of humility uncommon for someone with his background and talent.
