Food Worship In the Arts District: Introducing the All New Church & State

Following a five-week turnaround which saw the DTLA departure of Chef Greg Bernhardt and LA restaurateur Steven Arroyo, Church & State in the Arts District, has reopened its doors with all-new partners, all-new food & bar menu program, all-new decor and one magnificent Chef David Féau.

The reinvigoration of the restaurant is a collaborative project of LA-based restaurateur Bill Chait, Managing Partners Taylor Parsons and Chef Partner David Féau.

Together, the trio have successfully rekindled the warmth and vibrancy of one of LA’s truly unique dining spaces, and breathed new life into its proud lineage of being a great French bistro. 

Welcome to the Nabisco Building, built in 1925. Designed by St. Louis-based architect E.J. Eckel. The seven-story structure now used for luxury live-work lofts spaces and thanks to our new culinary guests, mouth watering appetizers such as chilled lobster bisque and show-stopping desserts such as soufflé au Grand Marnier.

Chef Féau’s dinner offerings are rooted both in his pastoral upbringing in the Loire Valley as well as in his experience working for Guy Savoy in Paris — by his mid-twenties, he was the Chef of Savoy’s famed Bistrot de l’Étoile, which was voted during his tenure the best bistro in Paris. 

Other menu highlights include refined takes on classics such as maquereaux au vin blanc (mackerel poached in white wine, served with romaine, lemon and carrot), onglet à l’échalotte (hanger steak with shallots) and Mediterranean-inflected thon piperade (yellowfin tuna with stewed peppers) that will have your taste buddies pledging allegiance.

Chef Féau’s selections will change frequently. Enjoy the latest calligraphed list of daily specials — les plats du jour — available for diners. 

In addition to Chef Féau’s reimagined bistro menu, the space has been given a substantial makeover by designer Ashley Hildreth, who in consultation with the partners has infused a whole new energy into one of the city’s great dining rooms. Red walls were stripped and painted a pale celery-green, and the old string lights were peeled away and replaced by retro-chic pendant lighting, allowing the space’s high ceilings to re-emerge once again.

Talented LA-based bartender Nick Meyer designed the French-leaning cocktail program, which features a mix of lightly-tweaked classics and produce-driven, light apéritifs, while République veteran Adam Ohler oversees the dining room and a wine program rooted in everyday bistro classics backed up by a range of vintage, off-list selections.
