Faith and Flower’s Chef Michael Hung: Back From Staycation at The Raymond

We don’t always leave downtown, but when we do… it’s to follow one our our favorite DTLA chefs. 

Then end of July saw Faith and Flowers Chef Michael Hung taking a week off to introduce The Raymond of Pasadena to some most delightful dishes. 

From Thursday, July 23, to August 1st 2020 patrons of Pasadena’s beloved Craftsman restaurant and handcrafted cocktail bar vowed to celebrated summer.

Who could resist a bit of R&R (Recipes and Relaxation)… with Chef Michael Hung offering a Five-Course Staycation Tasting Menu ($75 per person) 

DTLA knows Hung’s illustrious career credentials include time spent with Traci Des Jardins’s James Beard Award-winning team at San Francisco’s Jardinière and overseeing the kitchen at Roland Passot’s Michelin-starred La Folie. 

When Chef Hung left San Francisco to open Faith & Flower in Downtown Los Angeles, his leadership gained the restaurant “Best New Restaurant” by Esquire Magazine, Los Angeles Magazine, and Travel + Leisure. 

When dining at the Raymond 1886’s three patios or guests can savor Chef Hung’s flavorful Five-Course Staycation Tasting Menu at home by ordering Takeout or Delivery. 

The Raymond 1886 and 1886 Head Barman Jesus Gomez served special Wine & Cocktail Pairings and specialty cocktails for guests that opt to dine at The Raymond 1886. 

The courses included Gargalliou of Young Summer Squash Heirloom Tomatoes, Black Miso and Tomato Dashi, and a House-made Truffled Cornbread and Honey Butter. 

Continued courses began a delectable Catalan Prawn accompanied by Saffron Poached Fingerling Potatoes, Chorizo

The Fourth Course, A Grilled Petit NY Steak with Slow Cooked Wax Beans, Caramelized Onion and Mushroom Jam and for Dessert; Burnt Sugar Chocolate Mousse Pistachio Shortbread, Spearmint Crema, Honeycomb Toffee. 

We asked Chef Hung how his Staycation at one of Pasadena’s most historic restaurant locations with its antique wooden interiors, photos of yesteryear and modest vintage furnishings. A familiar spot for the locals of South Pasadena set inside an old craftsmen, we found out the little house was originally a servants quarters for the long lost Hotel Raymond that once sat atop of the hill. 

Retrofitted, and fortified with newly built annexes over the decades, the inside portion of the Raymond like many restaurants in America presented as vacate which gave the old craftsman more of a museum feel and a stark contrast from the liberties and libations of the patios outside.

Returning to the patios of DTLAs Faith and Flower is where Chef Hung headed next. DTLA is glad to have him back.
